A quintessential neighborhood bistro with a rustic vibe and an elevated menu. This restaurant is situated in the Saint-Germain neighborhood of Paris. It’s also recommended by the Michelin Guide.
Colvert isn’t new but they closed up for a bit because they wanted to create a new identity for the restaurant. They did a little remodeling, revamped their menu and reopened their doors with a new chef. Their current Chef is Baptiste Borderie. Borderie has worked in Michelin star restaurants such as L’Oiseau Blanc, the L’Orangerie at George V, and the Trianon Palace with Gordon Ramsay. I couldn’t wait to dine here. Our server proudly explained to us that the menu changes with the seasons and all of the dishes are created from fresh ingredients from local farms and markets. The a-la-carte menu had several seafood options and a vegetarian option. Menu items include things like, shellfish salad with Espelette pepper, tomatoes with verbena and smoked ricotta, pâté en croûte, aged rib of beef from Scotland, roasted redfish with tagliatelle, cod confit, roasted duck, and vegetarian Risotto. Dessert selections were chocolate mousse, profiteroles, clafoutis, or a cheese plate.
They also offer a three course lunch for 36€ that includes a starter, a main course and a dessert. This is outstanding value for the quality and creativity of the food here. For dinner you can get a five course tasting menu for €75. Wines by the glass change but when I was there they had Vouvray, Sancerre, Saint-Émilion, and Bourgogne rouge and blanc. I adore this restaurant and often bring my foodie and wine friends here for lunch when they visit Paris.
As soon as our plates were set in front of us, we could see the chef’s passion and talent, the plating was beautiful, and the food was delicious. Each bite was a clear indicator as to why this restaurant has the distinction of being recommended by the Michelin Guide. The owners of this restaurant also own several other restaurants in Paris including ChoCho in the 10th, Christine in the 6th, and Grains wine bar, also in the 6th.
They are open everyday for lunch and dinner!

I’ve heard good things about the Saint-Germain neighborhood, and this restaurant looks like one of them. But I’m glad I wouldn’t have to venture down that flight of stairs to get a bottle of wine!
