I found the cutest little café in the 5th arrondissement, not far from the Sorbonne. This particular area doesn’t feel too touristy at all. So if you’re staying in Le Marais, and it’s feeling a little crowded, you can either walk over here or jump on the metro, It’s not far at all.
They have omelettes and scrambled eggs! And they open at 8 AM! I’m always up early and most places don’t open for brunch or breakfast until 10. All of the food here is very fresh and good quality. I’m in love with the goat cheese, confit tomato and pumpkin seed omelet €12. I’ve also had the scrambled eggs with emmentaler cheese and avocado €11 The eggs come with crunchy buttered sourdough😃.
The French eat their eggs slightly under cooked so, if you don’t want that just say: j’aimerais mes œufs bien cuit, pronounced: jameray mayzoo bien kwee 🙂 Their sandwiches are also really yummy, there’s a grilled cheese and caramelized onion €11, salmon and house made cream cheese €12, bacon, cheddar, crispy onions, lettuce and tomato €11. Plus, all the drinks you hope to see: espresso, latte, matcha latte, iced lattes (soy & almond milk available), house made iced tea, fresh squeezed orange juice, and if you had beaucoup de vin the night before they have a warm drink called “the detox” made with ginger and lemon 🍋. If you want something sweet they have several cakes, including almond matcha, carrot and banana €5, several are gluten free. Also cookies & brownies €4.
The atmosphere here is a super chill, relaxed vibe. Open laptops dot the tables in front of what seems to be both students (many English speaking) and professionals. The people that work here are extremely friendly and speak both French and English.
If the sun is out there are little blue cafe tables outside for sitting and watching the hustle and bustle of the city go by.

I would argue that you are wrong, the french do not eat their eggs under cooked. The art and craft that goes into making your scrambled eggs creamy and not dry is a real skill. You probably eat your eggs over cookd 😉
